Spiced Apple Pancakes

“Magnolia Journal”

1 ¾ Cups All- Purpose Flour

3 TBS. Sugar

2 TSP. Baking Powder

1 ½ Apple Pie Spice

½ tsp Baking Soda

¼ Tsp. Salt

½ Cup Finely Chopped Apple

1 Egg

1 ½ Cups Buttermilk

3 Tbsp. Canola Oil

1 TSP. Vanilla

Butter (optional)

Maple Syrup (optional)

Stir together flour, sugar, baking powder, apple pie spice, baking soda, and salt in a large bowl. Stir apple into flour mixture. In another bowl use a fork to combine egg, buttermilk, oil, and vanilla. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). If the batter is too thick, stir in a little additional buttermilk.

Pour about ¼ cup batter per pancake onto a hot, lightly greased griddle or heavy skillet. Spread batter if necessary. Cook over medium heat 1 to 2 minutes on each side or until pancakes are golden brown; turn over when surfaces are bubbly and edges are slightly dry. Serve warm. If desired, top with butter and syrup. We added apple slices to the top of ours and sprinkled cinnamon for a fun look! We also garnished with cinnamon sticks before drizzling the syrup over the pancakes.
